Rebel Penne with Marinara Sauce

On November 14, 2011, Ms. Martina and Ms. Marissa made penned pasta with the 5th grade Rebel Gardener boys and girls. They were responsible for writing their own recipes based on the ingredients provided on an activity worksheet. Each student named the dish themselves based on taste, ingredients, and their own personal style. One student named the pasta “Gourmet Pasta”! They learned that the word “penne” is Italian for “pen.” They enjoyed making the pasta and sharing the meal at the end of class. Here is the base recipe for your family to enjoy at home:

1 onion, chopped fine

3 tbsp Olive oil

1 can of tomatoes

7 tomatoes, diced into small pieces

5 sprigs of parsley (from the Pepper garden!)

9 basil leaves (from the Pepper garden!)

1 leaf of sage (from the Pepper garden!)

4 red pepper flakes

A pinch of salt

Whole wheat pasta

Directions:

Add the olive oil to a saucepan. Let heat for 5-6 minutes. Add onions, sauté. Add canned tomatoes, parsley, basil, sage, red pepper flakes, and salt. Stir well and let simmer for 20 minutes on medium heat. Add fresh tomatoes. Let simmer an additional 10 minutes.

While pasta simmers, prepare 1 bag of whole wheat pasta according to the directions on the package. Strain the pasta after cooking (do not rinse!- rinsing removes the carbohydrate structure from the outside of the pasta and makes it hard for the sauce to stick to it well)

Pour sauce over strained, warm pasta. Add additional red pepper flakes to taste and enjoy!
